H! it's What's on your plate? (Warning: Contents are not uber healthy)

Ok, ok, ok
I've got that comfort food for you, per request.
This is not only a comfort food (in my opinion) it's also
kinda sorta healthy in a look at the big veggie kind of way. Right?

Well then, here you go ...
Hash Brown Hot Dish Stuffed Bell Peppers
(see bell peppers ... veggie ... healthy) heee

[Prep Time: 10 Min] [Cook Time: 30 Min] [Ready In: 40 Min] [Servings: 4]

You'll need:
• 4 frozen hash brown patties 
• 4 bell peppers, tops cut off, seeded
• 1/2 pound ground beef turkey
• 1 (15 ounce) can green beans, drained
• 1 fresh jalapeno pepper, diced (optional) a must
• salt and pepper to taste
• 1 pinch cumin
• 1 cup shredded Cheddar or less if desired

You'll do:
1. Cook the hashbrown patties according to package directions. Mash with a fork and set aside. Or make your own. Your choice.

2. Bring a large pot of water to boil over high heat. Place the peppers in the boiling water and turn off the stove. After 10 minutes remove the peppers from the water and set aside.

3. In a large skillet, cook beef turkey over medium heat until meat is no longer pink; drain. Mix in the hashbrowns, green beans, jalapeno, salt, pepper, cumin, and cheddar cheese.

4. Loosely stuff the beef mixture into the peppers. {mouth is watering} Place peppers onto a baking sheet. Bake 20 minutes in a 350 degrees F (175 degrees C) oven. Let cool 1 minute before serving.
